YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 large egg

1 1/2 teaspoons pure vanilla extract

1 cup pops flour

1 tsp baking soda

1 teaspoon salt

2 teaspoons ground cinnamon


Line baking sheets with parchment paper.

From the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the butter and sugar till light and fluffy, about 3 minutes.

Scrape the sides of the bowl and mix in the egg until completely incorporated. Scrape the sides of the bowl again and add in the skillet and vanilla.

Gently add the the flour mixture to the banana mixture and blend until just combined.

Scrape down the sides of the bowl and stir to recombine.

Use a moderate cookie scoop (approximately 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and then lightly press on the tops of each cookie with the bottom of a drinking glass. Because these cookies do not spread considerably, this will give them a traditional cookie shape.
